Coconut Chiffon Cake At Home Learning Project

My son usually has a special enrichment program each Friday at his school and since he is learning at home, I gave him a choice of a fun activity to learn or do each week. He chose baking. This week we baked a Coconut Chiffon Cake from a book I had checked out of the library before all this began! It was low sugar (although contained 7 eggs) and was delicious by all who tried!
